no soup for you

i wish i could say soup season was over, but we’re currently looking at april for that particular turning point. i made this after a recipe from orangette. i used the fattiest part of the ham for this, and it was even better the second day.

Split Pea (or Lentil) Soup (adapted from Orangette):

olive oil
generous slice smoked ham
1/2 C diced onion
1 diced carrot
1 C split peas OR brown lentils, dried
4 C water
salt, vinegar to taste

in a pot, heat olive oil and fry ham.  add onion and cook until caramelized. add carrots, peas/lentils, and water (here i used lentils, because i didn’t have split peas on hand. if you go the pea route, note that you will need to let the pot simmer about two hours). bring to a boil and cook for about ten minutes. reduce heat and let simmer for 45 minutes to an hour. at this point the soup will be thick; i added an extra cup of water to thin it out. break apart the ham with a spoon, it should give easily from the amount of time spent cooking. salt to taste.
